Endive (Scarola) in oil:
Product obtained from the tenderest leaves of the escarole endive carefully selected and washed, seasoned with oil, garlic and a pinch of chili. It is a very versatile product suitable for the most preparations - from simple use as a side dish for meat and fish dishes, to the filling of pizzas or as a base for vegetable soups. Sautéed in a pan with the addition of capers, olives and anchovies, it is the main element of the famous Neapolitan escarole pizza.
